Where it starts
Bacteria is constant. It exists in all environments and living
entities -- livestock included. Depending on the situation, bacteria
can be advantageous or disadvantageous. Bacteria is a disadvantage
in the meat industry. Prior to pre-evisceration in a meat processing
cycle, bacteria has grown and is thriving on cattle hide. When this
hide is pulled from the carcass, the bacteria spreads to the meat
areas of the carcass and even onto the surroundings and human
workers. This cross-contamination spreads the bacteria to other
phases of a meat processing cycle, such as pre-fabrication.
Eventually, this bacteria can cause meat spoilage and even lead to
product recall. |
